Thanks to Karen Nikitopoulos from the Georgia Cotton Commission for this recipe INGREDIENTS 1 regular eggplant, cut into 1/4-inch slices 2 portabella mushrooms, cut into 1/4-inch slices 1 large green bell pepper, cored and cut into 1-inch wide slices 1 or 2 large russet potatoes, peeled and cut into 1/4-inch slices 1/4 to 1/2 cup of Acala Farms Pure Cottonseed Oil with 1 or 2 drops of Acala Farms Hot Habanero Cottonseed Oil mixed in. Garlic and Parsley Chicken Kebabs

INGREDIENTS 1/4 cup Acala Farms Fresh Roasted Garlic Cottonseed Oil 1/4 cup finely chopped fresh parsley 1-1/4 tsp salt 1/2 tsp ground black pepper 2 lbs boneless, skinless chicken breasts cut into 1 1/2-inch pieces Lemon wedges for serving   METHOD Combine Acala Farms Fresh Roasted Garlic Cottonseed Oil, parsley, salt and pepper in a gallon-size zip-lock bag.
