Fried Shallot Chardonnay Cream Sauce
INGREDIENTS
2 tsp Acala Farms Fried Shallot Cottonseed Oil
1/2 cup minced shallot
1 cup diced pancetta
1 glass chardonnay – Botham Vineyards Latitude 43 recommended
2 cups heavy cream
1 Tbsp chopped parsley
METHOD
In a sauce pan, fry the minced shallots and diced pancetta with the Acala Farms Fried Shallot Cottonseed Oil over medium heat.
Once golden brown, pour in chardonnay and heavy cream.
Stir and let simmer for 5 minutes.
Add chopped parsley and mix.
Serve over pasta al dente topped with shaved romano or parmesan cheese and fresh chopped parsley.
Tzatziki Sauce
INGREDIENTS
3 cups plain greek yogurt
1 english cucumber, finely chopped
1 Tbsp Acala Farms Fresh Roasted Garlic Cottonseed Oil
1 tsp lemon zest
1 lemon, juiced
3-6 sprigs of mint, finely chopped
1-3 Tbsp dry dill, to taste
Salt to taste
METHOD
Combine all ingredients in a large mixing bowl.
Season to taste.
Enjoy over any meal you desire.
