Fried Shallot Chardonnay Cream Sauce


  • 2 tsp Acala Farms Fried Shallot Cottonseed Oil
  • 1/2 cup minced shallot
  • 1 cup diced pancetta 
  • 1 glass chardonnay – Botham Vineyards Latitude 43 recommended 
  • 2 cups heavy cream
  • 1 Tbsp chopped parsley



  1. In a sauce pan, fry the minced shallots and diced pancetta with the Acala Farms Fried Shallot Cottonseed Oil over medium heat. 
  2. Once golden brown, pour in chardonnay and heavy cream. 
  3. Stir and let simmer for 5 minutes. 
  4. Add chopped parsley and mix. 
  5. Serve over pasta al dente topped with shaved romano or parmesan cheese and fresh chopped parsley.
