INGREDIENTS
- 2 tsp Acala Farms Fried Shallot Cottonseed Oil
- 1/2 cup minced shallot
- 1 cup diced pancetta
- 1 glass chardonnay – Botham Vineyards Latitude 43 recommended
- 2 cups heavy cream
- 1 Tbsp chopped parsley
METHOD
- In a sauce pan, fry the minced shallots and diced pancetta with the Acala Farms Fried Shallot Cottonseed Oil over medium heat.
- Once golden brown, pour in chardonnay and heavy cream.
- Stir and let simmer for 5 minutes.
- Add chopped parsley and mix.
- Serve over pasta al dente topped with shaved romano or parmesan cheese and fresh chopped parsley.
