Asparagus & Gruyere Fritatta
  • 1 cup sliced asparagus (about 10 spears), trimmed
  • 1-2 Tbsp Acala Farms Fresh Roasted Garlic Cottonseed Oil 
  • 6 eggs
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 lb Gruyere cheese, cut into small cubes



  1. Preheat oven broiler.
  2. Microwave asparagus in a little water until tender.
  3. In a large, ovenproof nonstick skillet, heat Acala Farms Fresh Roasted Garlic Cottonseed Oil for 30 seconds. Add sliced asparagus and cook for 2 minutes. If using spears, arrange spoke-fashion in the skillet.
  4. In a medium bowl, whisk eggs, salt and pepper.
  5. Pour egg mixture over asparagus and cook on medium for 5 minutes or until eggs are nearly set.
  6. Sprinkle with cheese and broil for 1 or 2 minutes; just until eggs are set and cheese is melted.
  7. Make this 30 minutes ahead and serve warm or at room temperature.
