- 1 cup sliced asparagus (about 10 spears), trimmed
- 1-2 Tbsp Acala Farms Fresh Roasted Garlic Cottonseed Oil
- 6 eggs
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 lb Gruyere cheese, cut into small cubes
METHOD
- Preheat oven broiler.
- Microwave asparagus in a little water until tender.
- In a large, ovenproof nonstick skillet, heat Acala Farms Fresh Roasted Garlic Cottonseed Oil for 30 seconds. Add sliced asparagus and cook for 2 minutes. If using spears, arrange spoke-fashion in the skillet.
- In a medium bowl, whisk eggs, salt and pepper.
- Pour egg mixture over asparagus and cook on medium for 5 minutes or until eggs are nearly set.
- Sprinkle with cheese and broil for 1 or 2 minutes; just until eggs are set and cheese is melted.
- Make this 30 minutes ahead and serve warm or at room temperature.
