INGREDIENTS (makes 4 servings)
- 1 lb pork tenderloin
- 2 tsp dried oregano
- 2 tsp cayenne pepper
- 1 tsp paprika
- 1 tsp salt
- 2 tbsp Acala Farms Chili Cumin Cottonseed Oil
METHOD
- Preheat oven to 400 degrees F.
- In a bowl, combine oregano, cayenne pepper, paprika and salt.
- Cut tenderloin into 1/2 - 1 inch thick medallions. Toss in spice mixture
- Heat Acala Farms Chili Cumin Cottonseed Oil in large skillet on medium-high heat.
- Brown tenderloin on all sides, about five minutes.
- Arrange pork on baking sheet and place in oven 15-20 minutes.
- Bake until center of pork is 145 degrees F and no longer pink.
- Remove and let sit 5-10 minutes.
