Chili Cumin Rubbed Pork Tenderloin

INGREDIENTS (makes 4 servings)

METHOD
  1. Preheat oven to 400 degrees F.
  2. In a bowl, combine oregano, cayenne pepper, paprika and salt.
  3. Cut tenderloin into 1/2 - 1 inch thick medallions. Toss in spice mixture
  4. Heat Acala Farms Chili Cumin Cottonseed Oil in large skillet on medium-high heat.
  5. Brown tenderloin on all sides, about five minutes.
  6. Arrange pork on baking sheet and place in oven 15-20 minutes.
  7. Bake until center of pork is 145 degrees F and no longer pink.
  8. Remove and let sit 5-10 minutes.
NOTE: Pairs well with alfredo pasta to balance spice.
